Convert SQL 2008R2 Clusters to stand alone servers

Currently we have 2 sql 2008 R2 clusters, all data resides on Dell Equalogic SANs, even the installation is on the array. The arrays are setup as single array's ie they are not grouped together.The end goal is to break away from the array's and clustering and create multiple stand alone servers, 2 DB's per server with 24 db's total that will be virtualized. All DB's are created under a default instance of MSSQLSERVER. We are pretty much a 24/7 shop and have a very little window of downtime. I would like to keep the main DB name as that provides some replication to other DB's and vice versa.Trying to formulate a game plan on how this can be best accomplished. has anyone attempted/accomplished a task such as this before? if could you please share your insights and any gotcha's to look out for?

Almost forgot will be upgrading to SQL 2017 during the process
