personally I have always left an installed version in place when installing a new version. Once all databases and everything else are transferred over I have disabled the SQL Server and SQL Server Agent services so that they cannot be started by accident. I am pretty sure it isnt necessary but thats the way I have done it. I would at the very least move the Unistall SQL 2005 step to the last one in the process so that if anything goes bad you can restart the instance and get all systems online while you workout what to do next.

once again, from personal experience, I have always used named instances so this wasnt an issue for me during an upgrade. AFAIK if you try to leave the instance name blank / default then the install will carry out an in-place upgrade rather than a new installation.

Why you wan to uninstall SQL Server 2005 .then install SQL Server 2008 better upgrade SQL Server 2008 directly your database will be directly upgraded to SQL Server 2008 JObs and users i suggest it is a simplest way

I agree it is simple but it assumes that the upgrade will be 100% correct. You have no fall-back position if the upgrade goes wrong. It is this fact that has always led me to do a side-by-side installation and move databases between instances
