How do I track what data is being pulled from a database object (View or Table) by an external ODBC connection?

I hold n years of data in Operational Data Stores. I need to be able to monitor the date range parameters applied to the SELECTion of this data by the enquiring framework (Cognos8) as it interrogates my MSSQL2005 databases. This will allow me to dynamically go and pull additional historical data if required (i.e. if the SELECT is for a period beyond three years historically I can load the Delta).
