There is a registry edit you can make, see this support article for 2000 and 2005.
Also in 2005 and 2008, there is an option in SSMS, when you right click 'SQL Server Logs' and choose Configure
Edit: links for SSMS : SQL2005, SQL2008

I don't see anywhere in SSMS to change the # of error logs when connected to a 2005 server.
@Jack: what menu options do you get when you right-click 'SQL Server Logs' in Object Explorer?
I see configure and recycle. When I select Configure I can change the location of the erro logs and I can change what is logged (error, warning, information), but not the # of logs kept.
What version of SSMS are you using?
Just checking - you are looking at SQL Server Error Logs and not SQL Server Agent Error Logs? I get the options you mentioned when right clicking and selecting configure on SQL Server Agent Error Logs.
This link as the answer for 2005/08 - its basically a pictorial version of whats presented above
